Vinification Pinot Noir, a noble grape variety, is also know as Blauburgunder, Blauer Spätburgunder, Clevner, Klävner, Cortaillod, Savagnin Noir, Salvagnin Noir, and Servagnin. Despite being delicate and difficult to cultivate it is widely planted through out Switzerland and indeed, all over the world, this helps to explain its many names. It has thin skins and the bunches of grapes grow very closely together making the potential for rot very high. So it must be treated with the utmost love and care.
Tasting notes Bursting full of ripe fresh raspberries, wild strawberries and cherries is the initial impression of this wine. A muskiness in the background, a smooth velvety texture to it with soft tannins and a good lengthy finish.

An impeccable match with this Pinotpotée aux champignons, fricassée de champignons, stuffed mushrooms, but the best of all, croûtes aux morilles. So get mushroom picking with someone who knows what’s what (very easy to be mistaken about the poisonous ones).
When to drink and how to store Open and let it breathe for a while. Can be aged for 5 years and beyond. Make sure to keep in a dark wine cellar with a steady temperature.
