Soil Clay
Vinification Harvested as late as possible for optimum ripeness. These 2 grape varieties are naturally resistant. Aged in oak barrels from Allier, France.
Tasting notes A spectacular example of how two ripe plump grape varieties have created a rich robust red wine. Liquorish, cardamom, simmered berry compote, cloves and coffee can be found on the noise. A hint of bitterness is present which adds to its complexity and depth. Well developed tannins, excellent long length. A hugely impressive wine.
Food & mood match Wild game and heavy meaty dishes. Dark, very dark chocolate deserts such as fondants au chocolate and dark chocolate truffles. The setting - a sensual, extremely romantic dinner for 2 with an abundance of candles creating a soft warm glow.
When to drink and how to store Store with great care and respect in a deep, dark cellar. Great to drink within the first 5 years and can be kept for many more depending on the vintage.
A few words from the winemaker Made exclusively from amongst the oldest vines producing these varieties which were created by Changins - Haute Ecole de Viticulture et Oenologie (Wine School) in 1993.
